Broken Eggs to die for / Huevos rotos que te cagas
Broken eggs make an amazing brunch and many happy faces. That's all you need to know.
Ingredients

- 4 Eggs
- Corn tortillas
- Handful of cilantro, 2 tomatoes and 1 scallion.
- Mozzarella cheese (1/4 cup)
- 1/2 cup of cilantro
The process
- Fry the eggs (make sure to stop before the yolk is hard)
- Cut the tortillas into slices and toast then in a toast oven
- Chop / dice the onions, tomatoes and cilantro. Salt pepper and add in a bowl.
- Put the eggs in a bowl, add the salsa, cilantro, cheese and the tortillas
- "Break" the eggs with a fork and knive
- You can add some chorizo (italian sausage) to give an extra kick.
Serving tip
- Garnish with fresh cilantro on top
The original Mexican Salsa
Ingredients
- 4 tomatoes (on the vine are more tasteful)
- 1 white onion
- 1 cup of cilantro
- 1/2 serrano pepper
- salt
The process
- Blend the tomatoes, onion, cilantro, serrano pepper and salt
Serving tips
- Serve with chips
- Also good with quesadillas or huevos rotos
Pan tumaca (Pa amb tomaquet)
Ingredients
- 2 tablespoons of virgin olive oil
- 4 tomatoes (on the vine are more tasteful)
- 1 garlic
- salt to taste
- french baguette
- Blend the tomatoes, olive oil garlic and salt.
- Taste and add more garlic or salt to taste.
Serving tips
- Cut the bread and serve directly on top
- Could also place the tumaca in a bowl and let people add to bread
- Can serve with ham (procciuto, York, italian sausage...) and cheeses
- Great with sandwiches
